1. महुआ का हलवा
सामग्री:
- सूखे फूल – 1 कप
- दूध – 2 कप
- घी – 2 टेबलस्पून
- चीनी – ½ कप
- इलायची पाउडर – ½ टीस्पून
- काजू-बादाम – 2 टेबलस्पून
विधि:
- फूलों को पानी में धोकर सुखाएं और हल्के घी में भूनें।
- दूध डालें और धीमी आंच पर पकाएं।
- जब मिश्रण गाढ़ा हो जाए, तब चीनी और इलायची डालें।
- मेवे मिलाकर गरमागरम परोसें।
2. महुआ की बर्फी
सामग्री:
- पीसे हुए सूखे फूल – 1 कप
- खोया – 1 कप
- चीनी – ½ कप
- घी – 2 टेबलस्पून
- इलायची – ¼ टीस्पून
विधि:
- घी में फूलों को भूनें।
- खोया और चीनी डालकर मिश्रण को गाढ़ा करें।
- एक थाली में फैला दें और ठंडा होने पर काट लें।
3. महुआ की पूरी
सामग्री:
- फूलों का पेस्ट – ½ कप
- गेहूं का आटा – 2 कप
- गुड़ – ½ कप
- घी – 1 टेबलस्पून
- तलने के लिए तेल
विधि:
- फूल, गुड़ और घी मिलाकर आटा गूंथ लें।
- छोटी लोई बनाएं और बेलें।
- गरम तेल में सुनहरा तलें।
4. महुआ के लड्डू
सामग्री:
- फूल का चूर्ण – 1 कप
- गुड़ – ½ कप
- घी – 2 टेबलस्पून
- सूखे मेवे – 1 टेबलस्पून
विधि:
- घी में चूर्ण को भूनें।
- गुड़ मिलाकर पकाएं।
- ठंडा होने पर हाथ से लड्डू बना लें।
5. महुआ की खीर
सामग्री:
- सूखे फूल – ½ कप
- दूध – 1 लीटर
- चीनी – ½ कप
- मेवे – 2 टेबलस्पून
- इलायची पाउडर – ½ टीस्पून

- दूध को उबालें और फूल डालें।

6. महुआ की चटनी

- नींबू – 1

- सभी सामग्री को पीसकर गाढ़ी चटनी बना लें।

7. महुआ पकोड़ी
सामग्री:
- सूखे फूल – ½ कप
- बेसन – 1 कप
- प्याज – 1 बारीक कटा
- हरी मिर्च – 2
- नमक, मसाले – स्वादानुसार
- तेल – तलने के लिए
विधि:
- फूलों को काट लें और बाकी सामग्री मिलाकर गाढ़ा घोल तैयार करें।
- तेल गरम करके पकोड़ी बनाएं।
8. महुआ केक
सामग्री:
- सूखे फूल का पाउडर – 1 कप
- मैदा – 1 कप
- बेकिंग पाउडर – 1 टीस्पून
- दूध – 1 कप
- चीनी – ½ कप
- घी – ½ कप
विधि:
- सभी सामग्री मिलाकर घोल बनाएं।
- केक टिन में डालकर ओवन में 180°C पर 30 मिनट बेक करें।
9. महुआ का अचार
सामग्री:
- सूखे फूल – 1 कप
- सरसों का तेल – 1 कप
- अचार मसाला – 2 टेबलस्पून
- नमक – स्वादानुसार

- फूलों को सुखा लें।
