दिल्ली के अटल कैंटीन मे मिलेगा 5 रुपये मे खाना

दिल्ली की मुख्यमंत्री रेखा गुप्ता ने आधिकारिक रूप से ‘अटल कैंटीन’ परियोजना की नींव रख दी है। यह ₹100 करोड़ की पहल राजधानी में मजदूरों और निम्न-आय वर्ग के लोगों को मात्र ₹5 में ताज़ा, पौष्टिक भोजन उपलब्ध कराने के लिए तैयार की गई है।

पहले चरण में 100 अटल कैंटीनें 25 दिसंबर (सुशासन दिवस) तक शुरू हो जाएंगी। प्रशासन इन कैंटीनों को विशेष रूप से भीड़भाड़ वाले मज़दूर क्षेत्रों और औद्योगिक क्लस्टर्स में स्थापित कर रहा है। मेन्यू में दाल-चावल, रोटी जैसे पौष्टिक और सरल व्यंजन शामिल होंगे, जो सीधे असंगठित स्ट्रीट फूड सेक्टर की कीमतों को चुनौती देंगे।

हालाँकि इसे कल्याणकारी योजना के रूप में प्रस्तुत किया जा रहा है, इसके संचालन का ढांचा तमिलनाडु की प्रसिद्ध ‘अम्मा कैंटीन’ मॉडल जैसा है। सप्लाई चेन का मानकीकरण और संभवतः केंद्रीकृत किचन (जिन्हें बड़े NGO या B2B फूड-टेक कंपनियाँ संचालित कर सकती हैं) इस मॉडल का प्रमुख हिस्सा होंगे। यदि एक थाली का उत्पादन लागत ₹25 है और उसे ₹5 में बेचा जा रहा है, तो सरकार हर भोजन पर ₹20 की अप्रत्यक्ष “वेतन सब्सिडी” दे रही है—खासकर गिग वर्कर्स, मज़दूरों और प्रवासी कामगारों के लिए।

स्टार्टअप और गिग-इकोनॉमी—जैसे कि Zomato, Swiggy, Zepto—के लिए यह छिपा हुआ इंफ़्रास्ट्रक्चर बूस्टर साबित हो सकता है। भोजन की कम लागत से कम आय वाले कर्मचारियों की जेब में अधिक बचत होगी, जिससे प्लेटफॉर्म पर वेतन बढ़ोतरी का दबाव भी कम हो सकता है।

हालांकि, इसकी दीर्घकालिक सफलता यूनिट इकॉनॉमिक्स पर निर्भर करेगी। हर थाली पर ₹20 का नुकसान सहते हुए गुणवत्ता बनाए रखना तभी संभव है जब संचालन अत्यधिक कुशल हो—वरना यह योजना भी उन राज्यों की तरह वित्तीय बोझ का शिकार हो सकती है जहाँ ऐसी परियोजनाएँ टिक नहीं पाईं।
